Nestled in the rolling landscapes of Weinviertel, Austria, Johannes Zillinger crafts biodynamic wines with the precision of a Swiss watchmaker.

His 350-year-old family estate in Velm-Götzendorf, Austria, has been organically cultivated since 1984, long before such practices were trendy, and under Johannes, biodynamics became the rule rather than the exception.

Johannes refuses to be boxed in. He juggles amphora, steel, Austrian and French oak barrels with the flair of a seasoned bartender. While it might look messy from the outside, everything he does is part of a master plan: the goal is razor-sharp, terroir-driven wines with thirst-quenching acidity, delicate mouthfeel, and a salty undercurrent.

Smart, obsessive and endlessly experimental, Johannes has refined his portfolio into four distinct lines, each with its own personality:

  • JZ.Velue – approachable "village" wines, light and easygoing.

  • Parcellaire – from selected cooler plots, focused and clean.

  • Revolution – where vintage-blending, solera systems, and wild fermentation mingle gleefully.

  • Numen – the elite tier from the oldest vines, embracing skin contact, zero SO₂, and soul-searching depth.

Since taking the reins in 2012–2013, Johannes has brought the estate fully into biodynamic production, earning Demeter certification.
