Indre Oslo Matforedling

Indre Oslo Matforedling began as two hobby projects that grew into one of Norway’s most exciting artisan producers of cured meats and fresh sausages.

Founded by Timon Botez and Magnus Thorvik, both inspired by food traditions abroad, the company was built on a passion for craftsmanship and a desire to bring exceptional quality charcuterie to Oslo.

From the very beginning, IOm partnered with farmers who raise their animals outdoors and with care, often working with cuts or livestock that the mainstream market overlooks, like mature sows, older cows, and sheep. This philosophy, combined with traditional methods and plenty of patience, results in cured meats and sausages with unique depth and character.

Today, IOm specializes in fresh sausages with both classic and original spice blends, long-aged charcuterie, pâtés, and terrines. Their products are made weekly to order and delivered to sausage club members, specialty shops, and select restaurants. Rooted in sustainability, quality, and respect for animals, IOm has become a name synonymous with honest, handmade food.
